Christmas sweet potato cookies (vegan)



Soft sweet potato cookies, perfectly baked and dusted with cinnamon, showcasing a festive and delicious treat.


Ingredients:

- Approx. 280g boiled or oven-cooked organic sweet potatoes from Sönke (can be prepared in advance and refrigerated or used as leftovers)

- 160g spelt flour

- 1 tsp baking powder

- 120g ground walnuts

- 1/2 tsp cinnamon

- 1/4 tsp cardamom

- 100g sugar

- 1 sachet of vanilla sugar

- Dark chocolate

Mix all the dry ingredients together. Puree the cooked sweet potatoes with a hand blender or mash them finely with a fork. Then mix with the dry ingredients to form a smooth dough.

Roll the dough into small balls with floured hands, place on a baking tray lined with baking paper

and press flat with a fork.

Bake cookies at 180 degrees for about 20 minutes.

Decorate the cooled areas with dark chocolate icing and let them dry.
